Cookie Monster

Today was an at-home day, with a focus on baking and laundry.

The Moms Group I am involved with is undertaking a project of adopting a school/ classroom in our neighborhood. Our first effort is to provide cookies for a writing celebration they are having on Thursday. They need a lot of cookies to celebrate, so I went a little overboard and made 75 M&M cookies and 29 Pumpkin Spice cookies.

It took a while to make the M&M cookies because Fuller wanted to help. And while I like how he is interested in baking (actually, he can’t wait to lick the beater), it can hinder the process. I did not sleep well last night, making me a tad cranky and short with him today. I felt badly, but the three cookies and licking the beater (eventually) helped.

If you want to know how to make M&M cookies, here is my secret: use the Nestle Tollhouse Chocolate Chip Cookie recipe and substitute M&Ms for chocolate chips. I also take the cookies out a few minutes before they are really done so they will finish cooking on the cookie sheet. This makes them a tad softer.

The pumpkin spice cookies are also on the Nestle website, but I did the optional step of adding chocolate chips (since I had just enough in my freezer) and skipped the glazing. I have a thing for pumpkin spiced things in the Fall. I hope the kids at the elementary school enjoy them.

Now I have to clean up the mess. As soon as I muster up the energy to get back on my feet.
